Fat Free Muffins

I know I’ve been missing in action, so here’s a delicious fat free muffin recipe to make up for it. 🙂

Pumpkin Choc. Chip Muffins

1 3/4 cups Whole Wheat flour (or spelt, but you may need a few extra tablespoons with this option)
1/4 cup grain sweetened chocolate chips
3/8 teaspoon baking soda
3/8 teaspoon baking powder
1/4 teaspoon allspice
1/8 teaspoon sea salt
1/2 cup plus 2 Tablespoons soy milk (or water, or other plain non-dairy milk)
1/2 of a can of pumpkin (not pie filling, just pumpkin), this is about 7/8 of a cup is you’re using home cooked pumpkin
1/2 cup maple syrup

Mix the dry ingredients together in a large bowl. Mix the wet ingredients together in a separate bowl or large (2 cup capacity works) measuring cup. Add the wet ingredients to the dry and stir until just combined. Bake in a muffin pan at 350 for 25 minutes.
