Sandwich Filling Recipe

Here’s a sandwich filling recipe I like. This particular recipe was a little bland, but I was in a hurry and it tasted fine. You might want to play around with adding other crunchy vegetables like cucumbers, grated carrots, celery, other colors of bell peppers, green onions, fresh garlic, etc. I might use 1/2 mustard and 1/2 veganaise the next time I mix this up. Or I might add dulse for flavor instead of the mustard next time. Fresh parsley might also add some zest, but I didn’t have any on hand. If you’d rather use raw vegetables instead of pickles for the crunch, but like the idea of the dill flavor, try adding some ground dill seeds. A no-salt, herb seasoning mix could also add tastiness. Really, this is just a mixture of mashed chickpeas, whatever diced veggies I had on hand that sounded good, and some fast and easy seasonings. Have fun experimenting!

1 can garbanzo beans
1-2 tsp. dried parsley
1/2 red pepper, diced
1/2 tsp. garlic powder
about 8 hamburger dill pickles, diced
a spoonful of vegannaise

Mash the beans. Add the other ingredients and stir. Spread on bread or wrap in a lettuce leaf and eat.

  1. This is one of my kid’s favorite things to eat. We usually add diced onions as well and serve it like a sandwich (with lettuce, tomatoes, etc on top). So good!
