31 Days of Menus: A Virtual Sandwich Bar

Sandwiches are a lunchtime standby, but it’s easy to fall into a rut, preparing the same thing day after day.
So, for your eating enjoyment, a virtual sandwich bar:

Pick some from each category, mix and match.

Fillings:
lettuce
tomato
onion; red, yellow, or sweet
pickle
olives
peppers
avocado
roasted red peppers
cucumber
chickpeas salad
tempeh
grilled veggies

Spreads and Seasonings:
hummus
Peanut butter
jelly
veganaise
mustard
salt
pepper
lemon pepper

Breads (all whole grain of course :-) ):
sliced bread
pitas
rolls
tortillas
flat bread

  1. I’ve been craving hummus. But not with peanut butter. :)

    • My first thought when reading this in my inbox was, “what is she talking about?’ Then I remembered the sandwich post, lol. Yeah, don’t eat them together. (Now I’m sure to hear from someone who love that combination. ;-) )
